Birthday Cake


My lady asked what kind of cake I would like and I said white with chocolate frosting, then I added, with frosting in the middle. Hey, if you're gonna go all out, why not go ALL out? :-) This was her first cake made from scratch and she did a fantastic job! She was a little short on chocolate and sugar for the frosting but made do with what she had and it was awesome. I sure am lucky.

Birthday breakfast


My lady made me some breakfast potatoes with veggies for my birthday today. So sweet of her as she does not enjoy cooking like I do.

Broccoli and Cauliflower Au Gratin


This recipe came from our produce delivery farm and consisted of broccoli, cauliflower, garlic, flour, Cheddar cheese, paprika, salt & pepper, milk & breadcrumbs. Not the lightest meal, but it was filling and flavorful.

Rigotini Caprese


Not sure where this recipe came from but it was really good. I tossed tomatoes, basil & mozzarella with some olive oil, cooked the pasta, tossed it all together and topped with a small amount of parmesan.

Tomato Eggplant Spread on Parmesan Toasts





This idea came from our produce delivery farm and it was really tasty. My lady made the parmesan toasts while I put together the spread. Unfortunately, I didn't think to take a picture of the spread on the toasts...duh! But I digress...the spread was made with eggplant, tomato, pine nuts, olive oil, onion, garlic, basil, parsley & lemon juice. This will be a great party appetizer and we will keep it in mind for such a time.

Eggplant and Mozzarella Cheese Sandwiches


Yet another recipe from our produce delivery farm. These open face sandwiches were quite delicious and easy to make. Cook the eggplant until soft, roast the peppers and then assemble with eggplant, cheese, then peppers. Not the lightest meal, but boy was it tasty!

Ratatouille


This ratatouille recipe came from Cathe Olson's The Vegetarian Mother's Cookbook. It was a little different from other rataouilles I've had/made but still tasty. The main ingredients were eggplant, onion, garlic, zucchini, belle peppers, tomatoes, garbanzo beans, kale and herbs. I served it on some jasmine rice.

Sweet and Sour Tofu with Summer Vegetables and Black Rice


This fancy recipe came from Deborah Madison's Vegetarian Suppers and was quite flavorful. This was the first time I had had black rice and it was nice. The veggies I used were green beans, onion, and bell pepper along with ginger and garlic. We will most likely make this one again.

Pear Crisp


We had an abundance of pears so I charged my lady with finding something to bake them in. She found this recipe in Karri Alrich's Recipes from a Vegetarian Goddess. It had pears, cranberries, apple juice, brown sugar, cinnamon, nutmeg & granola in it. The topping got a little overdone due to our crappy oven but other than that it was really tasty!

We hadn't made this dish in a while and when we got green beans in our produce delivery, I knew exactly what I wanted to do with them. We found some red corn at our co-op and when we cooked it, it turned this lovely combination of purple & yellow, making our jewelled rice even more colorful.

Roasted Eggplant and Zucchini Parmesan


This is another recipe from Cathe Olson's The Vegetarian Mother's Cookbook. It was a lot wetter than I expected after it baked but it was tasty. It consisted of eggplant, zucchini, tofu, parsley,
mozzarella & parmesan. The Marinara Sauce I made came from the same book and consisted of an tomato sauce, onion, garlic, a carrot, basil, oregano, and parsley. The sauce was very flavorful and I will use it again for other dishes.

Breakfast Potatoes and Veggies


These breakfast potatoes were really yummy. I got the recipe/idea from Cathe Olsen's The Vegetarian Mother's Cookbook. I used Yukon Gold potatoes, broccoli, bell pepper, onion, fresh parsley & fresh thyme. The thyme really does it for me. It is one of my favorite herbs. A wonderful way to celebrate being home in the morning.

Eggpland Rollatini with Tomato Basil Sauce


I remember we both really liked this last time we made it so with all the eggplant we've been getting I made it again. We did hit a snag this time as we were out of parsley so we used dried and I'm afraid we used too much which drastically changed the flavor. Ah, live & learn!

Sesame Green Beans


These green beans were outstanding. Both my lady and I are particular about how our green beans are cooked and these came out perfect. They had a wonderful flavor and the texture was spot on. The bell pepper added a little extra something too.

Caprese Skewers & Tomato Sandwich


Being overrun with delicious tomatoes of all varieties, I found this recipe for caprese skewers. I marinated the mozarella bites in a vinaigrette and then alternated them with cherry tomatoes and fresh basil. Knowing that wouldn't be enough for us, we also made a tomato, lettuce, mozarella sandwich on locally made sourdough bread. The skewers came out great and the sandwich was already a staple here with all our great tomatoes.

Salad


We were supposed to make A Big Tomato Sandwich but when we went to make it, the bread had gone bad. So we improvised since I had already roasted the bell pepper. I made an impromptu caprese type salad with the pepper, heirloom & cherry tomatoes, basil and a herb vinaigrette. Even though it wasn't what we originally planned, it was still mighty good!

This dish had quinoa, corn, pine nuts, zucchini, green onions, basil & mint in it. I don't think we cared for it very much. It was lacking something if I remember correctly. Oh well, can't win them all!

Medley of Greens with Potatoes & Onions


We didn't have any leeks on hand so I made this dish again using just regular onions. Not nearly a tasty as with the leeks I must say.

Veggie Omelet


Again, I can't recall where this recipe came from but it was delicious. It was a large omelet I cut in two for us. The veggies appear to be broccoli, bell pepper, zucchini & onion. Probably some garlic in their too. The sauce on top is a delicious smokey chipotle hot sauce I had picked up at a tradeshow. A great way to start the day!

Fajitas


These fajita's come from Cathe Olson's The Vegetarian Mother's Cookbook. The recipe calls for tofu but we just used veggies. I used broccoli, bell pepper, zucchini, onion, and carrots. The fajita sauce is really what brings the flavor on. It consists of garlic, salt, cumin, chili powder, hot sauce, lemon juice, water & oil. We use locally made flavored corn tortillas, I believe these ones were red chile. They are mighty tasty on their own! And of course, we topped them with a bit of grated cheddar cheese.

Mashed Potatoes with Leeks and Green Beans


Considering it is actually October 13 now, I can't remember exactly what this dish was called but I do know we liked it! We used purple potatoes to mash up with the leeks and the green beans were buttered with sunflower seeds. The potatoes were really tasty but what could go wrong with potatoes & leeks! :-)

This recipe came from our produce delivery farm and it was both simple and flavorful. The dressing was olive oil, balsamic vinegar, garlic and salt. The salad consisted of just what the title implies. I added some fresh ground pepper on top. Yum!

We decided to try some red beets and I have to say neither of us liked them. I braised them according to a recipe I received from our produce delivery farm. The Salad was delicious of course as it was last time. We both really enjoy the golden beets we had in the past but any red beets we received after this went into the animals' veggie mix. :-)

Vegetable Stir Fry


This lunch was supposed to be a tofu vegetable stir fry but we didn't have any tofu on hand. It's from the book The Vegetarian Mother's Cookbook by Cathe Olsen. It was really tasty. The vegetables I used were broccoli, bell pepper, onion, carrot, & snow peas. The sauce was soy sauce, sesame oil, arrowroot powder, water & red pepper flakes. I would probably make some more sauce next time as it didn't go as far as I thought it would.

Today for lunch we just threw together a veggie burger with a veggie patty, red onion, leaf lettuce, tomato, bbq sauce, mustard, and a bit of smoked cheddar on some fresh buns from the co-op. Pretty satisfying!

Smoked Mozzarella-Snap Pea Sandwiches


I was looking online for some snap pea recipes and ran across this one from the May 2005 issue of Vegetarian Times. We weren't sure how it would come out but it was really tasty! I halved the peas and cooked them with some onions, salt & pepper and then balsamic vinegar. We used Naan as our bread and ate the sandwiches open faced after baking them just long enough for the cheese to melt. It had a very unique flavor with the smoked mozzarella and the balsamic peas. Again, yum!

Vegetarian Hot Pot


We hadn't made this soup in a while and since we had just received some bok choy I pulled the recipe out. It was ok, it wasn't as flavorful as it had been before but I blame that on the new/different veggie broth we used. We had run out of our regular kind and the co-op had been out for the last 2 weeks so we picked up something else. Not quite as tasty so it was a bit disappointing as we both really liked the soup in the past. We had been receiving red carrots for a few weeks and used them in this dish as well as in some salads we had made. The red carrots aren't quite as sweet as the "regular" ones but they were still good and added a nice touch of color.

Leek, Scallion and Fennel Gratin


This lovely, light dish came from Local Flavors by Deborah Madison. We had amassed a collection of fennel from our produce deliveries and were on the hunt for a recipe to utilize both the bulbs and the greens. It was so tasty and light, it left us very satisfied but not full. The leeks, scallions and fennel all together were very flavorful and adding some of the fennel greens really added to the depth of flavor. I'm sure we'll be revisiting this dish.

Peanut Butter-Banana Bread with Chocolate Chips


My lady made this delicious, decadent bread out of the March 2007 issue of Vegetarian Times. We had been wanting to make some banana bread and when this recipe showed its head, we knew she had to make it. Plus she is the baker of the family and we hadn't baked anything in a while. She used natural peanut butter and high quality chocolate chips and it turned out awesome! One slice was very satisfying so we didn't overdo it at one sitting.

Black Bean and Carrot Enchiladas


These delicious enchiladas came from The Vegetarian Mother's Cookbook by Cathe Olson. We had made some tofu enchiladas from the same book not that long ago. The filling consisted of carrots, black beans, spinach, & onion. The sauce also came from the same book and is very flavorful. The carrots added some sweetness and we just gobbled them right up and enjoyed them as leftovers the following day.

The recipe for this yummy dish came from the produce farm. It wasn't so much a medley of greens as I only used chard. It was quite tasty! Baking the potatoes, greens & leeks in some veggie stock really lent a nice flavor to the whole dish. I'm sure I'll be making this again. I used Yukon Gold potatoes as they are mighty good.

Stir-Fried Tofu with Asparagus


This tasty, and spicy, recipe comes from The Big Book of Vegetarian by Kathy Farrell-Kingsley. It consisted of garlic, asparagus, chili peppers, tofu, soy sauce, a teaspoon of sugar and fresh basil. The basil and chilis complimented each other very nicely and the sugar toned the heat down a bit. I ended up getting chili in my nose and eye as I wasn't careful about washing my hands after dicing them, or as the book suggested, wear gloves. Next time, I will be wearing gloves I'll tell you that! The kitchen got quite smoky and spicy as well as it was cooking but at least it tasted good after all of that, although I think it was a bit too hot for my lady.

Bubbles and Squeak


Another recipe I got from our produce delivery farm. We received brussel sprouts in our delivery so I thought I should find a recipe for them and found this interesting named one. The story with the recipes says it's British. It was quite simple. Steamed the brussel sprouts and then sauted them with some Yukon Gold potatoes. Pretty tasty although I think I could have steamed the sprouts just a bit longer.

Egg Thread Soup with Asparagus


I got this recipe online at recipezaar.com. I was on the hunt for aspragus recipes and this one popped up. It was really good and fairly easy to make with just broth, a small amount of pastina, eggs, asparagus and lemon juice. It kept really well for leftovers so I think we'll be making this again.
