Braised Rosemary Beets & Tomato Cucumber Salad with Mint


We decided to try some red beets and I have to say neither of us liked them. I braised them according to a recipe I received from our produce delivery farm. The Salad was delicious of course as it was last time. We both really enjoy the golden beets we had in the past but any red beets we received after this went into the animals' veggie mix. :-)

I'm slow catching up with your blog :) sorry! But have to say I love your using mint with tomatoes and cucumber! We do that too - actually, we put mint in a lot of things, hot and cold. Wonderful stuff! About the beets, I think it's a bit like broccoli (well, not really, of course, but . . . ) in that either you love it or hate it. It's very good cooked and then chilled in a vinaigrette containing horseradish - to make a kind of cooked beet salad. Haven't tried that with the golden beets (which, strangely, _I'm_ not too fond of LOL), but grrrrrreat at 'doing something' with the red. Just a thought ;)
