Spanish Potato Frittata
Tonight I made a simple, yummy frittata. My first one! The recipe was from the book The Vegetarian 5-Ingredient Gourmet by Nava Atlas and consisted of eggs, an onion, red potatoes and some salt & pepper. I think it would be nice to add some fresh veggies such as broccoli for some color and added flavor in the future. Now that I know how to make a simple frittata, the possibilities are endless!
