Tonight I opted out of making our planned meal and instead made a quick, yet delicious, egg scramble with some soy sausage links, green onions and an Italian cheese blend for a topper. The Italian cheese gave a really nice flavor to the whole dish. Lately we have been using Muenster with eggs, but I really enjoyed the flavor of the Italian blend. But hey, what isn't better with some Asiago and Parmesan added?
